It is important to me because food trucks in general are more than just mobile eateries—they are vital threads in the fabric of our local economy, culture, and community connection. Shutting down Maxtros and other trucks disrupts not just the livelihoods of small business owners but also the social spaces they create for our neighbors. Food trucks support local economies by creating jobs and partnerships with local farmers and food producers. They are also accessible, affordable, and welcoming spaces for all residents, no matter their background. We cannot let these small businesses close without fighting to protect their role in our community’s vitality.
